Empanadas de huitlacoche

Ingredients:
1 cup of Mi Huerta Huitlacoche
1 small onion, finely chopped
2 cloves garlic, minced
1 jalapeño, deseeded and finely chopped (adjust to taste)
1 large tomato, diced
1/2 teaspoon cumin
Salt and pepper to taste
2 cups masa harina (for the dough)
1 1/2 cups warm water
Vegetable oil for frying
Instructions:
Filling:
In a skillet over medium heat, sauté the onion, garlic, and jalapeño until soft.
Add the diced tomato, cooking until it breaks down into a sauce.
Stir in the huitlacoche, cumin, salt, and pepper. Cook for about 5 minutes until everything is well combined and the huitlacoche is heated through. Set aside to cool.
Dough:
Mix masa harina with warm water to form a soft dough. If it's too dry, add a bit more water; if too wet, add more masa.
Assembly:
Divide the dough into small balls.
Flatten each ball into a circle on a plastic-lined tortilla press or between two sheets of plastic wrap.
Place a spoonful of the huitlacoche mixture in the center of each circle.
Fold the dough over the filling to form a half-moon shape, pressing the edges to seal.
Cooking:
Heat oil in a deep skillet or pan to about 350°F (175°C).
Fry the empanadas until golden brown on both sides, about 3-4 minutes per side.
Serve:
Drain on paper towels, then serve hot with your favorite salsa or just enjoy them as they are!
