Flor de Calabaza Soup
Ingredients:
2 cups Mi Huerta Flor de Calabaza
1 onion, chopped
2 garlic cloves, minced
1 cup corn kernels
1 zucchini, diced
6 cups chicken broth
1 sprig of epazote
2 tablespoons oil
Salt and pepper to taste
Instructions:
Heat oil and sauté onion and garlic until translucent
Add corn and zucchini, cook for 3 minutes
Add Mi Huerta Flor de Calabaza and broth
Add epazote, salt and pepper
Cook over medium heat for 15 minutes
Serve hot and garnish with:
Mexican cream
Crumbled fresh cheese
Crispy tortilla strips
