Puerco en Mole Verde (Pork in Green Mole)

 Ingredients:

  • 1 jar Mi Huerta Mole Verde

  • 2 lbs pork shoulder, cut into 1-inch cubes

  • 2 medium potatoes, peeled and cubed

  • 2 carrots, cut into chunks

  • 1 white onion, diced

  • 4 cloves garlic, minced

  • 2 tablespoons vegetable oil

  • 4 cups chicken broth

  • Salt to taste

Instructions:

  1. Season pork cubes with salt. Heat oil in a large Dutch oven over medium-high heat.

  2. Working in batches, brown the pork on all sides until golden (about 5-7 minutes per batch). Remove and set aside.

  3. n the same pot, sauté onion and garlic until translucent (about 3 minutes).

  4. Return pork to the pot. Add Mi Huerta Mole Verde and chicken broth. Bring to a boil, then reduce heat and simmer for 1 hour.

  5. Add potatoes and carrots. Continue cooking for 30-40 minutes until vegetables are tender and pork is fall-apart soft.

  6. Adjust seasoning to taste.

Serve hot with warm tortillas, Mexican rice, and fresh lime wedges.
