Ingredients:
1 jar Mi Huerta Mole Verde
2 lbs pork shoulder, cut into 1-inch cubes
2 medium potatoes, peeled and cubed
2 carrots, cut into chunks
1 white onion, diced
4 cloves garlic, minced
2 tablespoons vegetable oil
4 cups chicken broth
Salt to taste
Instructions:
Season pork cubes with salt. Heat oil in a large Dutch oven over medium-high heat.
Working in batches, brown the pork on all sides until golden (about 5-7 minutes per batch). Remove and set aside.
n the same pot, sauté onion and garlic until translucent (about 3 minutes).
Return pork to the pot. Add Mi Huerta Mole Verde and chicken broth. Bring to a boil, then reduce heat and simmer for 1 hour.
Add potatoes and carrots. Continue cooking for 30-40 minutes until vegetables are tender and pork is fall-apart soft.
Adjust seasoning to taste.
Serve hot with warm tortillas, Mexican rice, and fresh lime wedges.
